Ingredients:
1/2 cup + 2 tablespoons cocoa powder
1/3 cup room temperature water
1 cup granulated sugar
1/2 cup + 1.5 tablespoon heavy cream
Directions:
In a small bowl, whisk the cocoa powder and water until combined
Combine the sugar and cream in a medium saucepan and put a digital thermometer on the side of the pan. bring to a simmer over medium heat, whisking occasionally until the sugar has dissolved. add the cocoa powder mixture to the cream mixture, and whisks occasionally. Cook glaze until it reaches 113-122 degrees Fahrenheit (5 minutes).
Strain the glaze through a fine-mesh sieve to get rid of any clumps.
